Ingredients:
- 1.5 kg tomatoes
- 1 onion
- 1 clove of garlic
- Herbs, spices or 1 tsp vegetable broth
- 1 bell pepper
- Olive oil and butter for frying
- Optional: a splash of milk
- Creme fraiche and parsley for serving
Preparation:
- Wash the tomatoes, make a small cut and let them soak in boiling water for about 10 minutes.
(This step can be skipped if you don't mind the tomato skin in the soup.) - Then drain the tomatoes, rinse with cold water, and peel off the skin.
- Peel and finely chop the onion and garlic.
- Heat olive oil and butter in a large pot.
- Sauté the chopped onion and garlic until translucent.
- Add the diced bell pepper and briefly sauté.
- Add the peeled tomatoes and spices.
- Let the soup simmer over medium heat for about 20-30 minutes until the tomatoes are soft.
- Add a splash of milk for creaminess.
- Season with herbs and spices according to your taste.
- Puree the soup until it has a smooth consistency.
- Serve hot and garnish with a dollop of creme fraiche and fresh parsley, if desired.
